The Retreat Banquet will be at Janos at La Paloma Resort (directions and map). For reservations, contact Elaine Owens at 520-622-6300 or psikey@psi.edu. PSI will cover the cost for each PSI staff member plus one guest and children. Additional guests are $50/person.

Regular Menu:

Roasted Beet and Watermelon Salad
with basil, mint, red onion and goat cheese, tossed with jalapeno orange vinaigrette

Braised Cochinita Pibil
Mayan style pork braised in achiote with citrus, cumin and clove served with black bean refritos, street vendor's corn and caramelized pineapple

Dessert
Kahlua ice cream with black bottom tartlets, cajeta and chocolate sauce

Vegetarian Menu:

Salad and dessert the same as above. For the vegetarian entree, Janos will use the best local produce available on the day of the banquet.
